I don't know much about the m2TV device besides it being only sold in Japan. I don't think you're looking in the correct folder for the captured mpeg files.
Try looking in your main hard drive /Users/[YOUR USER NAME]/Movies/ folder. You have to find the captured video before anything can be done.

Don't know what sites you found, but here is a site with a tutorial on how to setup mediatomb on a Mac for PS3.
I don't have a PS3, but I use a media server to play avis on a Mac to a LinkPlayer.
It's very nice to watch stuff without having to burn it to DVD first.

Try this... make a copy of the file, so you don't work on the original. Change the extension from .wmd to .zip. Example: abc.wmd change to abc.zip. Now use a compression program like winzip to unzip the renamed file. You may find files inside like avi or some other video format.

Ok, not sure why you want to get rid of the audio, but if you're going to use the same audio unchanged (so you don't lose sync),

Can't help with the ssa stuff, but you might want to checkout VirtualDub MP3 Freeze. VDub MP3 Freeze supports VBR mp3 audio.
That should put an end to your audio sync problems.
